This cake was inspired by a challenge I put onto myself: savory tomato cakes have been done before, what about a sweet tomato cake? I had to take it on. For weeks I dreamed of this flavor profile – as I pruned my tomato plants down or as I harvested the day’s tomatoes, I knew it would be such a wonderful summer cake if I could make it happen. A few tries later, this summer garden cake was born. Beautifully tender, softly herbaceous, and full of the delight in knowing that it works!
