On the joy of cakes — It took baking twenty Milk Bar cakes to really convert me into this art form; once you get intimate with sixty layers of cake, cake soaks, cake fillings, cake crumbs, and decorating styles, you’re really in it – whether you like it or not. For me, cakes are a moment in time where the world takes a pause: a plate, a slice, a fork. It’s intimate. But, it’s also grand. Once you zoom out from staring at the cake crumbs, there’s the rest of the cake, the party, the friends, and the celebration around it. It’s special.

On the art of cakes — It’s an art form. To create such soft layers, design for texture, and the eye for decor. Many elements and decisions along the way that elevate and complicate: the grit and weight of flour choice, the infusions and blends in the buttercream, the softness of curd and pastry cream, the smear of a pastry knife and the drop of a flower petal, the zest from an orange and the bitterness from cocoa nib. Each decision, a stroke on the canvas.
